World's Best Chex Mix
At first, it seems as if it's just an innocuous party mix to mindlessly eat while having a drink. But a couple secret ingredients (bacon! Thai chile lime cashews!) make it downright addictive. When I make some for a party, I always have to seal the container and put it on a high shelf like Frog did, when Toad made the delicious cookies and he needed to have Willpower.
Ingredients:
1/3 lb bacon
1 box of Wheat Chex
1/2 box Corn Chex
1 cup shelled pistachios
1 cup macadamia nuts
¼ cup finely chopped rosemary
1/3 cup coconut oil
2 tablespoons gochujang, sriracha or Tabasco
1 heaping teaspoon chile flake
Instructions:
Finely chop the bacon, and cook until crispy. Strain out bacon onto paper towels, and reserve grease. Put bacon bits in food processor, and process until it is “bacon dust”.
Preheat oven to 200 degrees. Mix the cereals and nuts together in a large roasting pan and set aside.
Melt together the bacon grease and coconut oil, then whisk in the rosemary, hot sauce of your choosing, and chile flake. Stir into the dry ingredients. Sprinkle on the bacon dust and stir again.
Bake for 2 hours, stirring every 20 minutes.
